Campfire Foil Stew

Stew in a foil packet? Yes, it is! This campfire foil stew is delicious and easy to make. This hearty mix of meat and veggies will refuel your clan after an exhausting day of outdoor adventure. Have everyone gather around and make their own!

What You Need (makes 4):

1½ lb. rump roast
4 potatoes
8 carrots
4 small onions
4 cloves crushed garlic
Salt & Pepper
Beef bullion granules
½ C. butter
¼ C. water
8 pieces of tin foil

Directions:

Step 1: Start by laying out 4 of your tin foil squares.

Step 2: Cube the roast and peel and chop the potatoes, carrots, and onions. Don’t remove the fat from the roast! This is going to help keep it tender as it cooks and add juices to your stew.

Step 3: Place a quarter of the ingredients you just cut on each of the foil squares. Top each with 2 tablespoons of butter and sprinkle with salt and pepper. Top this with ¼ teaspoon bullion granules and then pour one tablespoon of water over it.

Step 4: Pull up two sides of the foil packet so that they meet in the middle. Fold the edges together down toward the stew. Then roll the remaining ends. Take your 2nd sheet of tin foil for each and wrap it in the same way. Just rotate the packet so that the rolled ends are the folded and the folded are the rolled. This will just give you a bit of extra protection and keep everything in there.

Step 5: Bury your stew packets in the hot coals of the fire and let them sit for an hour! Once they’re ready to eat, pour them into a bowl (the foil will be dirty, hot, and could rip easily).

This recipe could also be made in an RV oven. Just preheat the oven to 375 degrees and follow the rest of the directions as written.
