Scalloped potatoes are a delicious side and a wonderful comfort food. When I make scalloped potatoes I’m reminded of dinners my grandmother used to make. And with this recipe, I can enjoy the nostalgic deliciousness of them around the campfire on our camping trips. These Campfire Scalloped Potatoes are easy to prepare and clean up. Since they’re made in foil packets, you’ll love how you can just crumple them up when you’re done and toss them in the trash. No dishes means more time to relax and unwind around the campfire! While maybe not as involved as my grandmother’s recipe, it still satisfies the need for homemade, nutritious food after a long day of adventure in the great outdoors. Ingredients
8 large red potatoes, thinly sliced
1 Stick of butter
Salt and pepper
1 C. half and half
Tin foil
Cooking spray
Directions
Step 1: Lay out your piece of tin foil and spray with cooking spray.
Step 2: On each sheet of foil, layer potatoes, pats of butter, salt and pepper. Then continue the layers until they are full and you’re out of ingredients!
Step 3: Fold the edges of the tin foil up and add 2 tablespoons of half and half to each packet.
Step 4: Close up the foil packet and place them on the coals of the fire. Cook for about 25 minutes or until the potatoes are tender.
While this recipe is very basic and works great for kids and picky eaters, you can add ingredients to it for more flavor, such as bacon, mushrooms, green onions, garlic, and cheese!
If you have a grill with you, you can make these on there as well. These potatoes go great with steak, burgers, chicken, and fish. They reheat easily, so if you have any leftover, be sure to put them in the fridge.
