Nothing hits the spot like a warm gooey cinnamon roll! Some people feel that campfires limit what you can cook, especially when it comes to baking. We say, if there’s heat, there’s a way! Make yourself a cinnamon roll on a stick, where a campfire is required to make them!
Ingredients
2 C. warm milk
2 ¾ sticks of real butter, softened
2 beaten eggs
½ C. white sugar
1 ½ Tbsp. fast rising yeast
9 C. flour
1 tsp. salt
2 C. brown sugar
3 Tbsp. cinnamon
1 8-oz package cream cheese, softened
4 C. powdered sugar
½ tsp. pure vanilla
Directions
1. In a large bowl mix the 2 cups milk, ¾ of a stick of butter (6 tablespoons), eggs, white sugar, yeast, and salt until well blended.
2. Add in the flour one cup at a time until you reach a doughy consistency that’s not sticky. You may not need all 9 cups to get there, that’s ok! Set aside and let it rise for about an hour.
3. While the dough rises, in a medium bowl, fold together the brown sugar, cinnamon, and 1 remaining stick of butter. Set aside, keeping at room temperature.
4. In another medium bowl, beat together the cream cheese, remaining butter, powder sugar, and vanilla, with a mixer until smooth.
5. Once the dough has risen, roll it out into a large rectangle. Spread the cinnamon & brown sugar mixture over the dough. This is where you would normally roll it up into a log and then slice it into cinnamon rolls. Instead, cut it into strips, and wrap the strips around a roasting stick. You may want to pinch the dough together at the top and bottom to make sure it stays in place.
6. Let the dough rise for an additional 45 min. Roast over the fire for around 5 min, or until done, rotating often so it won’t burn.
7. Now that you have your cinnamon roll, it’s time to put on that delicious frosting! You can drizzle it over the roll on the stick, or use it as dip!
This recipe will give you a fantastic homemade cinnamon roll that everyone will love! If you’re pressed for time and you don’t want to make everything from scratch, you have a couple options. You can get crescent roll dough and then make the filling and frosting and do the same thing, or just get a tube of premade cinnamon rolls and wrap them around the stick! The only problem with that last suggestion is that some of the filling will end up on the outside, which can burn faster and sometimes drip off while roasting. So keep an eye on them!
