The Campfire Breakfast Scramble





We love just how easy one-pan recipes are, especially for camping! It’s just so easy to throw all your ingredients into one pan, let it cook, and enjoy something that oftentimes tastes way better than if you cook a meal separately. This incredible campfire breakfast scramble can be whipped together in less than two minutes and thrown on your BBQ grill or campfire to cook, and the end result is a cheesy, tasty, filling breakfast treat!
INGREDIENTS:



  • 6 C. thawed hash browns

  • 2 C. diced ham, crumbled bacon, or sausage

  • 1/4 C. milk

  • 6 eggs

  • 2 C. shredded cheese of choice (use pepper jack for a nice zing!)

  • 1/2 C. diced onion

  • 1/2 C. diced tomato

  • salt and pepper or seasoning of choice (I love a good cajun seasoning in my eggs!)

  • Large disposable foil baking pan

  • Optional toppings: salsa, sour cream, hot sauce, sriracha, etc.


DIRECTIONS:


  1. Spray the baking pan with non-stick cooking spray, making sure to coat the sides and bottom.

  2. Add hash browns and ham, bacon, or sausage (add all three if you want a meaty dish)!

  3. In a separate bowl, whisk milk and eggs until smooth and combined. Whisk in cheese, tomato, and onions until well mixed, then pour the mixture over the potatoes and meat.

  4. Sprinkle with salt, pepper, or seasoning to your liking.

  5. Cover the pan with foil and cook in a barbecue grill at 375 degrees.

  6. After 30 minutes of cook time, remove the foil and cook uncovered for an additional 15-35 minutes, or until the edges begin to crisp and eggs are completely scrambled
    -OR-
    Cook on a grate over the campfire until crisp and fully cooked. The duration of cook time may vary, so check after 30 minutes to see how your BBQ breakfast is faring!




BONUS TIP

Instead of using frozen hash browns that will take up already limited freezer space, bring along a few cartons of dehydrated hash browns. All you have to do is add hot water, and in a few minutes you’ll have perfect hash browns for your scramble as opposed to waiting for your frozen potatoes to thaw out!
